Start with 18g dose at grind 32–34 on your Baratza Encore ESP Pro, targeting a 1:1.6–1:2.0 ratio and 23–25 second pull. Your shot history shows consistent sourness above grind 36, and your best balanced result came at grind 33 with the Ethiopia Yaye; this washed Brazilian should respond well in that zone. Pull your first shot, assess flow and taste, then adjust in 1–2 clicks finer if the shot runs too fast or tastes thin, or coarser if it chokes.
