Notes

Flow started at 10 seconds even across spouts and remained tat way throughout the shot. Lag is still long but stoped the shot earlier which ended up at the target ratio. Taste was bright but resolving. I think I prefer other beans in terms of taste but happy to have dialed in properly

Good body and coffee flavor. No sharp notes, fruity taste from the bean. Latte art was a nice hart then I messed it up

Good Shot

Summary

Clean shot — even flow start to finish, hit your Espresso target (36.4g yield, 1.2g over target), and the brightness resolved quickly. Balance 3 reads as bean character on this honey-process Ethiopian, not an extraction issue. You've got this one dialed in.

What the Numbers Say

Time 27s (Normal) and ratio 2.07 (Normal) — both on point. Adjusted dose 17.6g with 0.1g retention (negligible). Stopping the pump at 28g landed you at 36.4g with the 8g lag, right in the 35–37g target window. Balance 3 with quick-resolving brightness matches the bean's cranberry/baking spice profile — not a sourness problem. Notes confirm clean, even flow throughout.

The One Thing to Change

Lock grind 33.5, dose 17.6g, target 35–37g yield. Stop pump at 27g.

This shot at grind 33 hit the window cleanly, and your previous dialed-in shot at 33.5 also landed well. Grind 33.5 is the confirmed sweet spot — stay there. The lag is consistent at 8g, so the 27g pump stop is your standing call.

Bean Context

Cranberry and baking spice brightness resolving cleanly is exactly what this honey-process Sidama is supposed to do. At 20 days off roast you're in the peak window. The profile just isn't Diego's preference — that's taste, not extraction. Nothing to fix here.

Progress

Two clean shots in a row with even flow and quick-resolving acidity — the pump stop discipline is working. Lag management is clicking into place as a reliable habit.
