On a naturally high-malic-acid Sidra, finer is not helping — coarser extracts the sweeter compounds before the sharp acidity takes over. Return to 38 and see if the linger resolves.

Sidra de Luz is a double-fermented washed Sidra with crisp malic acidity by design — some brightness is always going to be present. The lime and cotton candy notes are there (your fruit and floral read on the best shot confirms it). At 26 days post-roast you're well inside the peak window. The linger today is extraction, not freshness or bean character — grind 38 was closer to dialed in for ristrettos on this bag.
