Notes

Flow started at around 8 seconds, even on both spouts, flow was high for a few seconds then the coffee strings became thinner. The flow was wobbly at the end but even across the spouts. The shot felt fast. the taste is sour that reduces after a few seconds but still lingers with a thin body

Overall Rating

I added 40ml of sweetened chai concentrate. The resulting drink was well balanced, without any sourness, not overly sweet and maintaining the notes of the chai and coffee

Summary

Confirmation pull at grind 28 — but the data shows grind setting 28, not 29 as planned. Shot ran fast at 21 seconds with a 2.22 ratio, rated sour with lingering acidity and thin body. This is not the confirmation pull you intended.

What the Numbers Say

Shot time of 21s is Fast by your labels and under-extracted by industry standard (target 25–35s). Ratio 2.22 is Normal — yield was fine at 39.8g. The fast time at grind 28 lines up exactly with what you saw last time at 28: channeling risk, faster flow, extraction problems. The lag_g reads 10g here, which is higher than your typical 6g Bambino drip lag — worth noting but not necessarily alarming. Flow description (high initial flow, strings thinning, wobbly finish) is consistent with a slightly loose puck or mild channeling at the coarser grind. Balance 2 (Sour) with lingering finish confirms under-extraction. The numbers and taste notes are fully aligned.

The One Thing to Change

Move back to grind 29 immediately. This shot was pulled at grind 28 — the setting you already confirmed causes problems. Grind 29 is your target.

Grind 28 has now produced fast, under-extracted shots with channeling signs twice. Grind 29 gave you clean even flow at 28 seconds. The plan was already set — this shot was a step backward, likely a grind dial error. Return to 29 and hold yield at 36–38g.

Bean Context

Ándale Market at 31 days post-roast is still in a good freshness window for a medium roast. However, this bean is naturally bright and acidic — cherry, wildflower honey — so some acidity impression is expected. The lingering sourness with thin body here is not bean character though; it's under-extraction caused by the grind being too coarse and the shot running too fast. A well-extracted shot on this bean should show brightness up front that cleans up quickly, not a sour finish that hangs around. The bean is not the problem — grind 28 is.

Progress

Your flow description is getting more precise — noting initial high flow, strings thinning, and wobbly finish shows you're reading the shot well in real time. That diagnostic skill is exactly what you need to catch future puck issues early.
